The Sangiovese hails from the Willunga foothills, consisting of mixed clay loams with ancient rock influence, limestone and sandstone weathered soils.
WINEMAKING
Fermented in a small open fermenter with indigenous yeast and minimal additions. Malolactic fermentation took place in stainless steel, followed by seasoned French oak for a further 14 months maturation.
TASTING
Colour: Deep red with purple hues
Bouquet: Red berries, blueberries with a hint of liquorice, leather and spice
Palate: The bright berries follow through to the palate, complemented by well-integrated acidity. Firm tannins provide elegant structure and length, while supporting the fleshy core. Layers of savory charcuterie, leather and spice emerge, adding depth and complexity.
